An Andean dish, humita are steamed corn cakes made with ground corn, eggs, cream, cheese and garlic. The cakes are cooked inside the husks of the corn, a traditional method of preparation that dates back to when they were first made by indigenous people in the area.
You may also sample this corn tamale in Argentina, Chile, Venezuela, Bolivia and Ecuador. Sometimes additional flavors, such as sweet basil in Chile, are added.
